Salad’s needn’t taste bland. My waistline friendly Waldorf salad tastes just as good but is packed with antioxidants and slathered in a fat-free dressing. Winning.
A delicious take on the classic pesto, favouring vitamin rich and antioxidant kale in place of basil and pistachios instead of pine nuts which are high in saturated fat. It goes very well with my sweet potato gnocchi or mixed together with lemon juice as a salad dressing. You can even try it mixed in with boiled new potatoes to jazz them up.
When these are so easy to make and despite being hailed as a “clean food” (which we all know I loathe) – they’re very tasty! Kale chips are virtually fat-free snack that’s also crammed with iron, anti-oxidants, fibre and cancer fighting beta-carotene. Now that’s pretty impressive for a bit of green …

A different take on the classic chicken caesar salad opting for raw kale over lettuce, homemade baked croutons, toasted almonds, homemade light caesar dressing, white anchovies and slices of crispy quinoa crusted chicken. D-double-lish.
